In 1670, Dom Pérignon (1638-1715), a cellar monk from the Benedictine abbey of Hautvillers, was the first to practice grape blending, which improved the quality of the wine and made certain defects disappear. According to legend, it was Dom Pérignon who introduced the use of the cork stopper held to the bottle by a hemp string impregnated with oil, which allows the wine to keep its freshness and foam. Moreover, he would have had the bottles strengthened by adopting a thicker glass to prevent the bottle from exploding, but despite the monk's efforts, the effervescence of the wine remained empirical until Pasteur's research on fermentation in the 19th century. The chalk pits near his abbey were used to keep the champagne at a constant temperature and humidity. Later on, other cellars were dug in full chalk. Dom Pérignon only exists as a vintage. Only the best grapes are chosen. Each vintage is singular and reinterprets the uniqueness of the seasons. Dom Pérignon reinvents itself each vintage by taking risks. Even the risk of not declaring the vintage.
Dom Pérignon's Vintage Rosé cuvée is a prestige cuvée of high quality. A harmonious blend of Chardonnay and Pinot Noir, it is a blended rosé with an amber colour with copper highlights. On the first nose, one discovers a champagne with notes of morello cherries, small berries and candied lemons. On the second nose, more intense and powerful flavours of mocha, cocoa and even peaty notes stand out. Its unctuous and extremely fine texture carries aromas of red fruits, spices and citrus fruits. On the palate it oscillates magnificently between freshness and power. The finish is long, with hints of pink grapefruit and a noble bitterness.
