History

The brilliant house Valentin Leflaive was born in 2014 in Avize, in the heart of the Grands Crus of the Côte des Blancs. It is the fruit of the crossing of two remarkable know-how: that of the Burgundian Olivier Leflaive, who has long been able to find the best grapes, and that of Erick de Sousa, who has been one of the greatest Champagne winegrowers for 30 years. Thanks to the expertise of Olivier Leflaive in Puligny, the grapes are supplied from the best 1er Crus and Grands Crus from the Côte des Blancs for the chardonnay, and from the Montagne de Reims for the pinot noir. With this excellent raw material, Erick de Sousa ensures the vinification and monitors the aging, in barrels used for the great Burgundies of the Olivier Leflaive house.

Terroir

The project to apply this know-how of excellence in Champagne was favored by the geographical proximity to Burgundy, and by the historical knowledge of Chardonnay and Pinot Noir grape varieties, on different soils but with similarities (limestone / chalk ... ), without forgetting the precious support of the Champagne winegrower Erick de Sousa as a partner. Thus were born the Valentin Leflaive champagnes, a confidential production of barely 25,000 bottles.

Vinification and aging

Champagne-type vinification method. The grapes are then vinified in temperature-controlled stainless steel vats. The estate proceeds to undergrowth vinification in oak barrels and oak casks for all or part of the cuvées it produces. The riddling of the bottles (to allow the wines to regain their clarity after champagnisation) is both manual on a wooden desk and mechanical by gyropalette. After riddling and aging on slats (obligatory for champagnes), it is necessary to evacuate the deposit which has accumulated in the bottle at the neck. The estate then performs disgorging with ice and by disgorging on the fly.
